Bees gather pollen as they move from flower to flower and pack it into the baskets on their back legs until it forms small golden granules. This is that pollen, from our hives.
It tastes earthy, nutty, sweet, floral and a little citrusy. Sprinkle it over an acai bowl, stir it into yoghurt, blend it into a smoothie or put it on porridge. It goes on salads, on top of biscuits and iced cakes, and into energy balls and granola bars. Restaurants dust desserts with it, and bartenders rim glasses with pollen and honey.
At Christmas. Scatter a spoonful over the pav just before it goes to the table. Run honey round the rim of a spritz glass and dip it in pollen, the way bartenders do. Or put it on the cheese board beside the comb honey.
A stocking filler under $25. Giving it as a present? Check the person is not allergic to bee products first.
